120g dates
1 cup oats
¼ cup cashew nuts or nut of your choice
1 tbsp raw cacao
2 tbsp nut butter of your choice

Soak the dates in hot water for a minimum of 1 hour Drain dates and place them in a food processor and process until smooth. You will need to switch the machine off and scrap the sides down every now and then to ensure the dates blend smoothly. Remove from the blender and put into a large mixing bowl.
In a clean dry food processor, blitz together the oats, nuts and raw cacao until fine. Pour the oat mixture into the bowl with the dates and add the nut butter. With your hands or a wooden spoon, mix until well combined.
Once mixed roll into balls +-20g each. You can roll the balls into coconut flakes, toasted chopped nuts, cacao powder, desiccated coconut or even sprinkles.
