Pumpkin Pie Almond Butter Oats

 Ingredients: 

 

 

 How to make it: 

 

 

  • 2 cups rolled oats

  • 1 cup cooked pumpkin (such as butternut or non-stringy pumpkin)

  • 1 cup water

  • 2 cups milk of choice (oat milk recommended)

  • 1/2 cup almond butter

  • 1 scoop vanilla protein powder

  • 1 tsp vanilla extract

  • Pinch of salt

 

Cook the Oats:

  1. In a saucepan, combine the rolled oats, water, milk, and a pinch of salt. Bring to a simmer over medium heat.
  2. While the oats are cooking, mash the cooked pumpkin until smooth. Stir the mashed pumpkin and protein powder into the oats.
  3. Continue to simmer until the oats are soft and have absorbed the liquid, stirring occasionally.

Serve:

  1. Once the oats are cooked to your desired consistency, remove from heat and stir in the vanilla extract.
