 How to make it: 

 

 

  • 2 cups crushed coconut biscuits
  • 1/2 cup butter or margarine
  • 1/4 cup chocolate chips

 

 Filling 

  • 2 cups Lifestyle Food Low Fat Milk
  • 1/2 cup light brown sugar or syrup to sweeten
  • 1/2 tsp vanilla extract
  • Pinch of salt
  • 1/3 cup plus 1 tbsp cornstarch
  • Cinnamon

 

  1. Add crushed biscuits to a bowl and mix in melted butter. Let the mixture cool slightly before adding chocolate chips.
  2. Press the mixture into a muffin tray lined with muffin casings or sprayed with non-stick spray. Use a spoon or a small shot glass to create a hole in the centre of each cup for the filling.
  3. Place the tray in the fridge to set.
  4. Pour milk into a saucepan and bring it to a simmer. Add sugar and vanilla extract.
  5. In a separate bowl, mix cornstarch with a small amount of milk to make a slurry.
  6. Gradually whisk the slurry into the warm milk, reducing the heat to prevent boiling over. Stir until the mixture thickens.
  7. Pour the thickened milk mixture into the cookie dough cups.
  8. Place the filled cups in the fridge to set for about 1-2 hours.
