Ingredients
1x packet Lifestyle Food Gluten Free Corn Macaroni Pasta
1 1/2 cup cooked black beans
1/3 cup chopped red onion
1 x can tomato onion mix
1/4 cup tomato paste
1 tbsp Lifestyle Food Honey
Splash of lime
Olive oil to fry
1 tsp Lifestyle Food Paprika
1 tsp ground cumin
1-2 crushed garlic cloves
Salt and pepper
Dairy Free Cheese Sauce
1 cup soaked Lifestyle Food Cashews
1 cup vegan creamed cheese or regular cottage cheese
2 cups Lifestyle Food Oat Milk
1/3 cup cornstarch
1/3 cup Lifestyle Food Nutritional Yeast
Salt and pepper to taste
Cheese to top
Sliced jalapeños to top
Fresh cilantro to serve

How to make it:

  1. Cook the pasta according to the packet instructions. In a pan, heat olive oil and sauté the onion, paprika, cumin, and garlic until fragrant.
  2. Add the beans, tomato onion mix, tomato paste, honey, lime, and seasoning. Let it simmer for 10-15 minutes.
  3. Drain the cooked pasta, mix it with the bean sauce, and transfer to a baking dish.
  4. Blend the cheese sauce ingredients and pour over the mac and cheese. Top with cheese and bake for 25-30 minutes until golden.
  5. Serve hot, garnished with sliced jalapeños and fresh cilantro. Enjoy this delightful fusion of flavours!
