Ingredients

       2 cups Lifestyle Food Spanish Style Rice Cups

       2 cups Lifestyle Food Brown Rice Cups

       1 cup cubed zucchini

       1/2 cup sliced peppers

       1 cup cherry tomatoes

       1 cup canned chickpeas, drained and rinsed

       1/2 cup kalamata olives

       2 cups vegetable stock

       1/3 cup corn starch mixed with water to make a paste

       1 tbsp soy sauce

Serve with:

       Pesto

       Cream cheese

       Fresh herbs

Additional add-ins: Chicken breast, salami, or canned tuna

Method

    1. Preheat the oven to 180°C.
    2. In a baking dish, combine the rice, vegetables, chickpeas, olives, and vegetable stock.
    3. Bake for 15 minutes until the vegetables are tender. Mix in the cornstarch slurry and soy sauce.
    4. Bake for another 10-15 minutes until fully cooked and golden on top.
    5. Serve with cream cheese, pesto, and fresh herbs for an extra burst of flavour!
