Ingredients
● 2 cups Lifestyle Food Spanish Style Rice Cups
● 2 cups Lifestyle Food Brown Rice Cups
● 1 cup cubed zucchini
● 1/2 cup sliced peppers
● 1 cup cherry tomatoes
● 1 cup canned chickpeas, drained and rinsed
● 1/2 cup kalamata olives
● 2 cups vegetable stock
● 1/3 cup corn starch mixed with water to make a paste
● 1 tbsp soy sauce
Serve with:
● Pesto
● Cream cheese
● Fresh herbs
Additional add-ins: Chicken breast, salami, or canned tuna
Method

- Preheat the oven to 180°C.
- In a baking dish, combine the rice, vegetables, chickpeas, olives, and vegetable stock.
- Bake for 15 minutes until the vegetables are tender. Mix in the cornstarch slurry and soy sauce.
- Bake for another 10-15 minutes until fully cooked and golden on top.
- Serve with cream cheese, pesto, and fresh herbs for an extra burst of flavour!
