This Coconut Sugar Banana Tarte Tatin combines the deep, molasses-like sweetness of coconut sugar with the creamy goodness of ripe bananas, all encased in a buttery, flaky puff pastry.

How to make it:
1 sheet puff pastry
3-4 medium bananas
1/2-3/4 cupsLifestyle Food Coconut Sugar
Smooth nut butter
Whipped cream
Toasted nuts
Preheat the oven to 180 degrees Celsius.
Spray or smear a round tart tin with butter and sprinkle on the sugar, layer on the sliced bananas. Measure out the puff pastry according to the tart pan, letting 1cm fall over the rim.
Layer on the puff pastry, tuck in the sides and brush the top with melted coconut oil or butter.
Bake the tart for 20-30 minutes until brown, once brown, remove from the oven and let it cool slightly, before flipping the tart over onto the plate, letting the bottom of the tart present as the top, beautifully caramelised.
